Ingredients
- 185 mL of Light & Creamy Evaporated Milk
- ¾ cup (165g) brown sugar
- 2 eggs
- 3 ripe bananas, mashed
- ½ cup (45g) of Oats
- 2 cups (300g) self raising flour
Preparation Method
- Preheat oven to 180°C/160°C fan forced. Grease and line a 20 x 10cm loaf pan with baking paper.
- Whisk Evaporated Milk, sugar and eggs together in a medium bowl; fold in bananas, Rolled Oats and flour.
- Spoon mixture into prepared pan. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Serve warm, cooled or toasted.
Tip/Hint:
The best Banana Bread is made with really ripe bananas. If you have bananas going brown, place them in the freezer and keep them to use for this recipe. For a quick breakfast, bake the bread in advance, cool then cut into slices and freeze until required.
