HONEY CAKE


Everything about this cake is very traditional, including its dense, rich texture, its intense cinnamony sweetness and its deep color, achieved by adding strong tea and cocoa powder to the batter. Using whole-wheat flour is a break from tradition, and in this particular cake, it works beautifully, because the cake is so rich and dense.

Ingredients
  • 1 teaspoon light olive oil for pan
  • ½ cup strong unsweetened tea, cooled
  • 1 cup 100% whole-wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsweetened cocoa powder
  • 2 large eggs
  • ¼ cup packed brown sugar
  • ⅓ cup light olive oil (not extra virgin)
  • ½ cup honey (6 oz)

Preparation Method
  1. Preheat oven to 350 degrees F. Brush an 8 X 4-inch loaf pan with olive oil.
  2. Prepare ½ cup of strong tea and allow it to cool.
  3. Meanwhile, in a medium bowl, whisk together the flour, baking powder, cinnamon and cocoa powder.
  4. In a large bowl, whisk together the eggs and the sugar. Add the oil and the honey, whisking after each addition.
  5. Add the flour mixture and the tea, half of each at a time, alternating. Whisk just until combined. Batter will be thin.
  6. Pour the batter into the prepared baking pan. Bake 40-45 minutes, until deep brown and fragrant and a toothpick inserted in center comes out clean.
  7. Cool 5 minutes in pan, then invert onto a tray and from the tray to a cooling rack. Cool 10 more minutes before slicing and serving.

BANANA OAT BREAD

Ingredients
  • 185 mL of Light & Creamy Evaporated Milk
  • ¾ cup (165g) brown sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • ½ cup (45g) of Oats
  • 2 cups (300g) self raising flour

Preparation Method
  1. Preheat oven to 180°C/160°C fan forced. Grease and line a 20 x 10cm loaf pan with baking paper.
  2. Whisk Evaporated Milk, sugar and eggs together in a medium bowl; fold in bananas, Rolled Oats and flour.
  3. Spoon mixture into prepared pan. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Serve warm, cooled or toasted.

Tip/Hint: 
The best Banana Bread is made with really ripe bananas. If you have bananas going brown, place them in the freezer and keep them to use for this recipe. For a quick breakfast, bake the bread in advance, cool then cut into slices and freeze until required.


BANANA AND COCONUT DRINK

Ingredients
  • 2 tbsp of Milo
  • 1 tbsp of desiccated coconut
  • 2 tsp of honey
  • 1 banana, sliced
  • 2 cupsof  hot or cold milk
  • toasted flaked coconut, to serve

Preparation Method
Step 1
Place milo, coconut, honey, banana and milk in a blender or food processor; blend until smooth.

Step 2
Divide between 2 glasses. If desired, sprinkle with toasted flaked coconut to serve. 

WATERMELON MILK SHAKE

Ingredients
  •  A slice of Watermelon 
  • 1/4 cup - condensed sweetened Milk
  • 1.5 cups - water
  • 1/2 - vanilla extract
  • a handful of ice cubes 

Preparation Method
Step 1
Add the watermelon pieces, condensed milk, water and vanilla extract in a food processer and beat well for a while.  

Step 2
Serve the milkshake immediately with ice cubes (do not store in the refrigerator).

  • 1 banana
  • ¾ cup cold trim milk
  • ½ cup plain unsweetened yoghurt
  • 2 tbsp Milo
  • 2 tbsp of Oat(Quaker Oats)

Preparation Method
Place all ingredients in a food processor or blender and blend for 15-20 seconds or until smooth. Pour into tall glasses and serve immediately.

CORN BREAD

This is a bread recipe that is so nice and yummy. I prepared it and became hooked. Take your time this weekend and prepare it for yourself and family!
Ingredients
  •  A handful of corn grit
  • 1/2 cup cornmeal
  • 5 tablespoons butter
  • 4 tablespoons sugar
  • 2 eggs
  • 13 tablespoons of milk
  • 1 Cup and 3 tablespoons of flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt 

Preparation Method
  1.  Preheat your oven to 390 F
  2. In a large bowl,cream the butter and sugar
  3. In a separate small bowl, mix whisk the egg and mix it with the milk
  4. In a third bowl, mix the dry ingredients and set aside
  5. Pour 1/2 of the dry ingredients and 1/2 of the egg and milk mixture into the large bowl with the
  6. Creamed butter and sugar and incorporate.
  7. Add the corn grit and pour in the rest of the ingredients and mix completely.
  8. Grease your baking pan and place the dough and bake for 25-30 minutes. To ensure its properly
  9. baked, stick a tooth pick in the centre and if it comes out dry, it is ready.

POTATO AND EGG STEW

Ingredients
For the potato
  • 3 large irish potato
  • 1 chopped clove of garlic
  • a pinch of salt
  • Oil for frying

For the egg stew
  • 2 Large eggs
  • 1 cooking spoon of blended tomato and pepper
  • A handful of chopped onions
  • A handful of chopped green pepper
  • Seasoning
  • 1 tablespoon of butter

Preparation Method
For the potato
  1. Peel the potato and chop to desired frying shape.
  2. In a pot of boiling water, place potato, salt and chopped garlic and cook for about 3-5 minutes
  3. Take out of the water and strain. Dab the excess water off the potato using a paper towel.
  4. Heat up your oil for frying and immerse the potato and fry till golden brown.

For the egg stew
  1.  In a pan, heat up your butter and fry the onions and green pepper.
  2. Pour in the tomato-pepper mix and fry some more.
  3. Add your seasoning and then break your eggs into the pan and scramble it by stirring.
  4. Allow the egg to cook and taste for salt.
  5. Serve with your potatoes. You could sprinkle extra seasoning on your potatoes if you wish.

Note: If you have extra time in the morning, you can also bake your potatoes instead of boiling and frying. That helps you avoid the oil.


 

CHICKEN IN WHITE SAUCE AND RICE

Ingredients
  •  4 Chicken breasts
  • 4 Tablespoons butter/Margarine – Preferably butter
  • 1.5 cups of coconut milk (or regular milk)
  • 1 tablespoon corn starch
  • 2 handfuls of chopped carrots
  • 2 handfuls of chopped red bell pepper
  • 1 handful of chopped spring onions
  • 1 handful of chopped green beans
  • 1 clove of Garlic
  • 2 teaspoons of dry pepper (chilli powder)
  • Seasoning cubes
  • 1 tablespoon of crayfish powder
  • Salt

Preparation Method
Step 1
Season your chicken with salt, 1 teaspoon of dry pepper, seasoning cubes, chopped garlic and 2 tablespoons of butter and bake in the oven for 20-25 minutes at 350F. To ensure the chicken is cooked, make an incision in the middle of the chicken to check if its red. Then if not, its cooked. If you are boiling your chicken, just season and boil and set aside.

Step 2
In a pot on low-medium heat, pour in your milk, corn starch, remaining butter, and all your seasoning. Keep stirring the sauce so it does not over-thicken. Add your vegetables and stir in. If you are adding your boiled chicken, add it at this stage as well or you can serve it on the side.

Step 3
The sauce should be slightly thick not all the way. If it thickens too fast, add more water and stir. The whole process of cooking the sauce should take just 5-8 minutes.

Step 4
Serve with white rice.

FRENCH TOAST

French toast is known in France as pain perdu, which translates to “lost bread,” because it makes delicious use of leftover bread. This recipe is the one you won't forget in a hurry.
 
Ingredients
  •  4 eggs
  • 2/3 cups of Dano full cream powdered milk
  • 8 thick slices of bread (better if slightly stale)
  • Butter
  • Honey or Jam

Preparation Method
  1. Whisk the eggs, milk, salt, and sugar in the cake pan.
  2. Place the frying pan on the stove over medium-low heat.
  3. Place four slices of bread into the mixture to soak for one minute.
  4. While the bread is soaking, add 1 tablespoon of butter to the pan.
  5. Lift one piece of bread from the mixture.
  6. Lay the bread gently in the frying pan.
  7. After a few minutes, peek under a slice of bread to see if the French toast has turned golden and browned and turn to the other side
  8. Serve hot with  jam or honey.
 

DATES MILKY WATERMELON DRINK

Watermelon is a great fruit to consume if you are on a diet. It is rich in vitamins, it is a low calorie fruit and very refreshing. Dates are added to increase the iron content and nutritional value of this drink. Dates are also rumored or maybe even confirmed to be great aphrodisiacs, so if this is right up your alley, go for it. I would still maintain that dates are high sugar, so you may not want to saturate the drink with dates because then it becomes too sweet to drink. If you notice from the recipe,  a little bit of ginger has been added for that extra kick. In my opinion, it just adds character to the drink.

Ingredients
  •  1 cup of blended watermelon
  • 1/4 teaspoon of grated ginger
  • 2 pieces of dates (remove the seeds)
  • 7 tablespoons of evaporated milk
  • 1/4 cup of crushed ice.

Preparation Method
  • Blend all ingredients together till smooth and serve chilled.
