ADALU(NIGERIAN BEANS AND CORN RECIPE)

 Adalu is basically made by cooking beans and corn together. Try this recipe today!

Ingredients
  • 1 cup of beans
  • 1/2 cup of corn kernels ( you can use the canned corn or boil fresh corn and shred)
  • 1 large tomato
  • 1/2 red bell pepper( tatashe)
  • 2 small scotch bonnet peppers (ata rodo)
  • 1/4 bulb of onions
  • 1 Seasoning Tablet
  • 1/2 teaspoon of salt  
  • 1/2 teaspoon of dry pepper
  • 1 cooking spoon of Palm oil

Preparation Method
  1. If you are using the fresh corn on the cobs, boil them at this time.
  2. Pick your beans, wash and boil till semi-soft.
  3. Whilst the beans is boiling, blend your tomato, bell pepper and scotch bonnet pepper and boil to remove any excess water. 
  4. Chop your onions and add to the beans when it’s soft. Add the tomato mix to the beans and season with the salt, pepper and seasoning cube.
  5. Once the sauce is thick and almost drying, add the corn and stir in then add the palm oil and lower the heat to simmer.
  6. Serve as a stand-alone dish or supplement with other carbohydrates.

QUICK CHICKEN WITH RICE

Ingredients
  • Water 1000g 1lt
  • Chicken stock cubes 8g
  • Long grained rice 300g
  • Vegetable oil 15g 15ml
  • 1 onion 160g
  • 1 red pepper 90g
  • 1 yellow pepper 90g
  • 1 green chilli 3g
  • 1 clove garlic, chopped 5ml
  • 1 carrot 75g
  • Ground paprika 7g 15ml
  • Water 200g 200ml
  • Frozen peas 250ml
  • Coarse black pepper 1,5g 5ml
  • Chicken breast, finely chopped 300g

Preparation Method
  1. Place the water and 8g Chicken Stock cubes in a saucepan and bring to the boil. Add the rice, stir once, and return to the boil, then turn the heat down and follow cook until rice is done. Strain
  2. Heat the oil in a wok and stir-fry the red pepper, yellow pepper, chilli pepper, carrot and crushed garlic for 2-3 minutes.
  3. Add the chicken and fry until cooked
  4. Now add the paprika and stir-fry for 2 minutes.
  5. Add the cooked rice, coarse black pepper, frozen peas and stir in gently. Add 200ml ml water and 1 Chicken Stock cube and bring the heat up until water is hot.
  6. Serve once the extra water is absorbed and the dish is hot.

GOAT MEAT IN VEGIE SAUCE & COUSCOUS

Complement healthy nutritious couscous with spicy & tasty Goat meat in veggie sauce. The taste of this combination is absolutely delicious.
Ingredients
  • 500g of Couscous
  • Half a kilo of Goat meat
  • Groundnut oil
  • Spinach (green leaf)
  • 6 long carrots
  • 8 balls of fresh tomatoes
  • 4 fresh peppers
  • 4 chili peppers
  • 1 large ball of onion
  • A handful of ground crayfish
  • 2 cucumbers(for dressing)
  • Knorr cubes
  • Salt to taste
  • 2 tablespoonful (scoop) of butter

Preparation Method
  1. Boil one third(1/3) liter of water, add salt and a tablespoonful of oil. Remove from heat and add 500g of couscous. Allow to stand until all the water is absorbed (approximately 3-5 mins).
  2. Allow Couscous to simmer on low heat while you stir with a fork to separate grains. Add few knobs of butter and bring down from heat when water is completely dried. (Couscous is ready to be served)Wash your goat meat and put in a clean pot. Add your sliced onion, salt, curry powder, Knorr cubes, bay leaf and a little water to enable your meat cook to your desired taste. When meat is cooked,bring down from heat and set aside.
  3. Wash your spinach,slice and set aside.
  4. Wash your tomatoes, pepper, onion, carrots and nicely slice into small fine pieces.
  5. Place your dry pot on the cooker,add your groundnut oil and allow to heat for 2 mins.
  6. Add your sliced pepper, carrot, tomatoes, onions and stir. Allow to cook to on low heat for for 3 mins. Add your goat meat, a pinch of salt, curry powder, ground crayfish & Knorr Cubes.
  7. Stir gently and allow to simmer for 2 mins or more.
  8. Add your sliced spinach and stir to allow all ingredients and vegetable mix together. Bring down from heat and its ready to be served.
  9. Your Couscous is ready to be served with the sauce. You can gently slice your washed cucumber and use as a dressing for your meal.
  10. Also take note: Couscous is made from DURUM wheat and its highly nutritious. Its a meal good for those with High Blood Pressure and diabetics.

NIGERIAN GROUNDNUT SOUP

Groundnut soup is tasty and nutritious, garnishing with vegetable just makes it better! It is best enjoyed with swallow meals.
 
Ingredients
  • 500g raw peeled groundnuts (peanuts)
  • Assorted meat & fish (Beef
  • Shaki (cow tripe)
  • Dry fish OR Stock fish)
  • Palm Oil
  • A small bunch of Pumpkin leaves
  • Spinach or Bitterleaf
  • 2 tablespoons ground crayfish
  • Knorr Soup seasoning
  • Salt (to taste) & ground dry pepper.

Preparation Method
  1. Before cooking your groundnut soup, Soak the stock fish & dry fish for a few hours. The length of time depends on how hard the stock fish is. You may also decide to boil it a bit.
  2. When soft, clean the fish, remove the bones and separate them into small pieces.
  3. Roast the raw groundnuts in a pan, stirring constantly till they look golden brown( Make sure the groundnuts do not get burnt), After this set aside to cool down completely then grind into powder with a dry mill.
  4. Wash & cut the pumpkin leaves into tiny pieces. If using spinach, cut into small pieces, if using bitterleaf: wash till the bitterness is fairly out & set aside.
  5. Prepare other ingredients: grind the pepper and grind the crayfish.
  6. Start cooking the shaki first as it is the toughest meat in the bunch. Always keep water to the same level as the contents of the pot and top it up as you cook.
  7. When the shaki starts to curl, add the dry fish and stockfish.
  8. When the shaki is almost done, add beef and Knorr soup seasoning. Cook till all the meat and fish are well done.
  9. Add the crayfish, salt and pepper, cover and cook till it boils.
  10. Transfer the meat and fish to another pot/container leaving the stock in the pot.
  11. Add the ground groundnuts and stir very well till there are no lumps. Reduce the heat to very low and start cooking.
  12. Stir every 5 minutes and top up the water if necessary. To avoid the mixture from burning, watch it closely and stir as often as necessary.
  13. Cook till a thin film of clear oil appears on the surface. This should take about 15 minutes. Add palm oil and stir very well.
  14. Add the beef and fish, stir and cook on low heat till it boils. For those who prefer their groundnut soup without vegetables add the vegetables, stir and leave to simmer. Stir again.

HONEY CAKE


Everything about this cake is very traditional, including its dense, rich texture, its intense cinnamony sweetness and its deep color, achieved by adding strong tea and cocoa powder to the batter. Using whole-wheat flour is a break from tradition, and in this particular cake, it works beautifully, because the cake is so rich and dense.

Ingredients
  • 1 teaspoon light olive oil for pan
  • ½ cup strong unsweetened tea, cooled
  • 1 cup 100% whole-wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsweetened cocoa powder
  • 2 large eggs
  • ¼ cup packed brown sugar
  • ⅓ cup light olive oil (not extra virgin)
  • ½ cup honey (6 oz)

Preparation Method
  1. Preheat oven to 350 degrees F. Brush an 8 X 4-inch loaf pan with olive oil.
  2. Prepare ½ cup of strong tea and allow it to cool.
  3. Meanwhile, in a medium bowl, whisk together the flour, baking powder, cinnamon and cocoa powder.
  4. In a large bowl, whisk together the eggs and the sugar. Add the oil and the honey, whisking after each addition.
  5. Add the flour mixture and the tea, half of each at a time, alternating. Whisk just until combined. Batter will be thin.
  6. Pour the batter into the prepared baking pan. Bake 40-45 minutes, until deep brown and fragrant and a toothpick inserted in center comes out clean.
  7. Cool 5 minutes in pan, then invert onto a tray and from the tray to a cooling rack. Cool 10 more minutes before slicing and serving.

BANANA OAT BREAD

Ingredients
  • 185 mL of Light & Creamy Evaporated Milk
  • ¾ cup (165g) brown sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • ½ cup (45g) of Oats
  • 2 cups (300g) self raising flour

Preparation Method
  1. Preheat oven to 180°C/160°C fan forced. Grease and line a 20 x 10cm loaf pan with baking paper.
  2. Whisk Evaporated Milk, sugar and eggs together in a medium bowl; fold in bananas, Rolled Oats and flour.
  3. Spoon mixture into prepared pan. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Serve warm, cooled or toasted.

Tip/Hint: 
The best Banana Bread is made with really ripe bananas. If you have bananas going brown, place them in the freezer and keep them to use for this recipe. For a quick breakfast, bake the bread in advance, cool then cut into slices and freeze until required.


BANANA AND COCONUT DRINK

Ingredients
  • 2 tbsp of Milo
  • 1 tbsp of desiccated coconut
  • 2 tsp of honey
  • 1 banana, sliced
  • 2 cupsof  hot or cold milk
  • toasted flaked coconut, to serve

Preparation Method
Step 1
Place milo, coconut, honey, banana and milk in a blender or food processor; blend until smooth.

Step 2
Divide between 2 glasses. If desired, sprinkle with toasted flaked coconut to serve. 

WATERMELON MILK SHAKE

Preparation Method

Add the watermelon pieces, condensed milk, water and vanilla extract in a food processer and beat well for a while.  

Step 2
Serve the milkshake immediately with ice cubes (do not store in the refrigerator).

CORN BREAD

This is a bread recipe that is so nice and yummy. I prepared it and became hooked. Take your time this weekend and prepare it for yourself and family!
Ingredients
  •  A handful of corn grit
  • 1/2 cup cornmeal
  • 5 tablespoons butter
  • 4 tablespoons sugar
  • 2 eggs
  • 13 tablespoons of milk
  • 1 Cup and 3 tablespoons of flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt 

Preparation Method
  1.  Preheat your oven to 390 F
  2. In a large bowl,cream the butter and sugar
  3. In a separate small bowl, mix whisk the egg and mix it with the milk
  4. In a third bowl, mix the dry ingredients and set aside
  5. Pour 1/2 of the dry ingredients and 1/2 of the egg and milk mixture into the large bowl with the
  6. Creamed butter and sugar and incorporate.
  7. Add the corn grit and pour in the rest of the ingredients and mix completely.
  8. Grease your baking pan and place the dough and bake for 25-30 minutes. To ensure its properly
  9. baked, stick a tooth pick in the centre and if it comes out dry, it is ready.
