JOLLOF RICE WITH CHOPPED FISH AND SEAFOOD

Jollof rice with chopped fish and seafood is a tasty Nigerian delicacy you need to try at home today!
Ingrediennts
  • ½ Onion, sliced
  • Oil
  • 1 clove garlic, chopped
  • 2 chillies, halved
  • Maggi cubes, crumbled
  • Medium curry
  • Ground cumin
  • Ground coriander
  • Paprika
  • Peri peri spice
  • Basmati rice
  • Firm white fish, cut in cubes
  • Seafood mix
  • Water
  • Prawns
  • 2 tomatoes, chopped
  • Fresh coriander, chopped
Preparation Method
Step 1
In a large pan, fry the onion and garlic until lightly browned.

Step 2
Add the chillies, and all the spices and fry for 2 minutes.

Step 3
Add the cut up fish and the seafood mix, stir well to coat with spices, then add the rice and water.

Step 4
Bring to the boil, then turn down the heat and simmer for 20 minutes, stirring occasionally.

Step 5
Add the chopped tomato and prawns and simmer for 3 – 5 minutes.

Step 6
Sir in the chopped coriander and serve.
