HOMEMADE STRAWBERRY JAM

 Strawberry jam is everyone's favourite jam to make.Try this easy strawberry jam recipe today
 
Ingredients
  • 700g  strawberries
  • 700g  white granulated sugar (always the same weight as the fruit with the stalks removed)
  • 105g  – equivalent to 105ml – liquid pectin (15% of the weight of the cleaned fruit)
  • The juice of a lemon

Preparation Method
  1. Remove the stems, then wipe and weigh the strawberries.
  2. Weigh out exactly the same amount of sugar.
  3. Put the strawberries in a pan and heat them slowly over a low heat – you do not need any water.
  4. As the natural fruit juice seeps out, encourage it by gently mashing the fruit using a potato masher or the end of a rolling pin – but be gentle and ‘love’ the fruit.
  5. Add the sugar and the lemon juice before the fruit begins to boil, then bring it to the boil and add the pectin.
  6. Maintain a steady boil. It will darken as it nears setting point. If it begins to foam on the surface, add a knob of butter to disperse it.
  7. Test for set using the cold saucer method and if it is ready, ladle the jam into your prepared jars, then seal and label. If it is not ready, simply continue the boil and try again after a few minutes.
