COFFEE TIGERNUT MILK

Coffee tigernut milk is not a combination that is new to many food lovers. Some people have been making this combination for a very long time. I had a drink recently that combined both and I was intrigued at this mix. It still had a strong coffee flavour but the tigernut flavour came through.

Ingredients
  •  2 cups of raw tigernuts
  • 1/2 cup of coconut milk
  • 2 teaspoons of coffee
  • 3 cups of water
  • 1 teaspoon of Vanilla Essence 
  • 2 tablespoons of Honey

Preparation Method
  1. Soak tiger nuts for a few hours and with a strong blender and the three cups of water, blend the tigernuts.
  2. Using a sieve, pour the blended tigernut over a sieve and squeeze the juices out of the chaff.
  3. Sieve it multiple times till a lot of the chaff is out of the drink.
  4. Pour the sieved milk into a blender with the coconut milk, coffee, vanilla essence and honey and blend.
  5. Serve as a cool drink by either refrigerating or placing ice cubes in the glass.

HOMEMADE STRAWBERRY JAM

 Strawberry jam is everyone's favourite jam to make.Try this easy strawberry jam recipe today
 
Ingredients
  • 700g  strawberries
  • 700g  white granulated sugar (always the same weight as the fruit with the stalks removed)
  • 105g  – equivalent to 105ml – liquid pectin (15% of the weight of the cleaned fruit)
  • The juice of a lemon

Preparation Method
  1. Remove the stems, then wipe and weigh the strawberries.
  2. Weigh out exactly the same amount of sugar.
  3. Put the strawberries in a pan and heat them slowly over a low heat – you do not need any water.
  4. As the natural fruit juice seeps out, encourage it by gently mashing the fruit using a potato masher or the end of a rolling pin – but be gentle and ‘love’ the fruit.
  5. Add the sugar and the lemon juice before the fruit begins to boil, then bring it to the boil and add the pectin.
  6. Maintain a steady boil. It will darken as it nears setting point. If it begins to foam on the surface, add a knob of butter to disperse it.
  7. Test for set using the cold saucer method and if it is ready, ladle the jam into your prepared jars, then seal and label. If it is not ready, simply continue the boil and try again after a few minutes.

ASIAN SHRIMP & VEGETABLE PASTA STIR FRY

This is a great, simple, healthy and quick shrimp and vegetable sauce that can be prepared on any budget and eaten with absolutely anything ( Yam, rice, potatoes etc).  Try the sauce as a busy weeknight supper or as a stew alternative for rice. Feel free to use the vegetables you have at hand.

Ingredients
  • 3 cup KRAFT Lite Asian Toasted Sesame Dressing
  • 2 Tbsp of Creamy Peanut Butter
  • 2 Tbsp of  soy sauce
  • ½ tsp of crushed red pepper
  • Pasta (preferably spaghetti), uncooked
  • 2 tsp of oil
  • ¾ lb. uncooked deveined peeled medium shrimp
  • 6 oz. pea pods, cut into strips
  • 1 cup chopped seeded peeled cucumbers
  • 1 carrot, shredded
  • 5 radishes, thinly sliced
  • ¼ cup of dry Roasted Peanuts, chopped

    Preparation Method
    1. Mix first 4 ingredients until blended; set aside for later use. Cook pasta as directed on package, omitting salt.
    2. Meanwhile, heat oil in large skillet on medium heat. Add shrimp; stir-fry 2 min. Add vegetables; stir-fry 2 min. or until shrimp turn pink and vegetables are crisp-tender. Remove from heat.
    3. Drain pasta. Add to shrimp mixture along with the dressing mixture; mix lightly. Sprinkle with nuts.
    4. Serve and enjoy hot

      CHICKEN CURRY SAUCE

      Here is a great simple recipe that require minimal cooking effort, ditch your regular red stew for this, I promise you it’s well worth it. Serve it with some white rice and enjoy.

      Ingredients
      • 8- pieces Chicken – Leg and Thigh (Cut into chunks)
      • 3 – cubes maggi
      • Salt – to taste
      • 4 – Tablespoons Cooking oil
      • 3 – cups cubed Sweet Potatoes or Yam
      • 2 – (400ml) Cans Coconut cream (milk)
      • 2-3 cups Vegetables of choice
      • 1 – Tablespoon curry powder
      • 1 – Teaspoon Turmeric powder
      • 1 – Scotch Bonnet pepper (Atarodo) – Minced

      Preparation Method 
      Step 1
      Season the cut chicken with salt and 1 cube maggi – Set aside

      Step 2
      Heat a large skillet over high heat. Add in the oil. Add in the seasoned chicken and sear on all sides until brown.

      Step 3
      Add in all left over ingredients with the chicken. Stir to combine

      Step 4
      Simmer on medium heat until chicken is cooked through and yam is tender. Adjust with water for thickness.

      Step 5
      Serve with rice.

      FRIED SLAW-LOW CARB MEAL

      Ingredients
      • 800g minced beef or turkey
      • 1 teaspoon each – ginger, pepper flakes, garlic, curry, thyme and onion
      • Salt – to taste
      • 3 tablespoons cooking oil
      • 1 large onion – Minced
      • 12 cups slaw mix (Red cabbage, green cabbage and carrot ) 

      Preparation Method
      1. Season minced meat with spices and salt. Set aside
      2. Place a large skillet on medium heat, heat up oil 
      3. Add in seasoned minced meat and cook until browned 
      4. Add in onions. stir fry until fragrant and translucent (4-5 minutes)
      5. Add in slaw mix. Stirfry for 5 more minutes. Taste and adjust for seasoning. 
      6. Serve for lunch or supper

      OKRO SOUP WITH VEGETABLES

      There are so many incredible ways to make okro Soup. This mixed version with vegetables is one of the best. It’s so green and so lush yet it’s super simple to make. Serve it with your favorite swallow.
      Ingredients
      • 1 small onion
      • 1 large bell pepper (tatashe)
      • 2 hot pepper
      • 1 cup palm oil
      • ½ cup crayfish powder
      • Cooked Assorted meat and fish – I used a combination of Goat, beef, red prawns and panla
      • Maggi and salt – to taste
      • 6 cups chopped okro
      • 6 cups meat stock or water
      • 4 cups chopped greens (ugu, spinach, tete etc)

      Preparation Method
      • Combine onion and peppers in a blender or food processor. Process until just coarse
      • Place a large pot on medium heat. Add in palm oil. Stir in crayfish and combine with the oil.
      • Add in minced peppers/onion (from step one).
      • Add in meat stock and precooked meat. Stir. Taste and adjust for salt and maggi. Simmer covered for 10 minutes.
      • Stir in chopped okro and cook for 2 mins. Stir in chopped green and cook for another 3 minutes. Remove from heat immediately.
      • Okro vegetable soup is ready to serve. Enjoy!

      CRISPY BAKED CHICKEN

      This chicken recipe might be new to many of us, but there is no harm in trying it out. Have a nice time preparing this recipe!
      Ingredients
      For the chicken
      • 3 chicken breasts (cut into strips)
      • Salt – To taste
      • Black pepper – to taste
      • Maggi – 1 cube

      Breading
      • 1/3 cup flour
      • 1/2 – 2/3 cup crushed cornflakes
      • Salt and pepper – to taste

      Other
      • 2 eggs – cracked and beaten
      • 2 tablespoons plain yogurt
      • Chili flakes – to taste

      Preparation Method
      1. Combine chicken with salt, pepper and maggi. Set aside (can be marinated overnight)
      2. Preheat oven to 400 degrees F. Lightly oil a foil covered baking sheet, set aside
      3. In a small bowl, combine flour with some salt and pepper. set aside.
      4. Pour crushed cornflakes into a separate bowl. Set aside
      5. Crack eggs into a bowl, add in yogurt and season with chili flakes.  Combine.
      6. In batches, dredge chicken in flour mixture, dip into eggs, then dredge in crushed Corn Flakes, press firmly to coat. Shake off any loose coating.
      7. Place chicken pieces on lined oven tray. Bake for 15-20 minutes.
      8. Serve and enjoy!

      Ingredients
      • 1 cup unpeeled brown beans ( Drum or Oloyin)
      • 1 raw hot pepper (Ata rodo) – chopped
      • 1/2 of a medium onion – Finely chopped
      • Salt – to taste
      • oil for frying (1 part palm oil to 4 part vegetable oil).

      Preparation Method
      Step 1
      Cover beans with generous amount of water and leave to soak overnight.

      Step 2
      Rinse soaked beans. In a blender, combine the beans with 1/3 cup water, Puree to a smooth paste.

      Step 3
      Pour the pureed beans into a bowl. add in the salt,chopped pepper and onions. Mix with a rolling pin or electric mixer  for 5-10 minutes (this is to incorporate air into the batter and make the resulting akara fluffy).

      Step 4
      Set a deep pan on medium heat, add in some oil.

      Step 5
      Once the oil is hot, scoop 1/2 cooking spoon of batter into oil – you do not want to spread out the batter in the oil, you want to pour batter directly on itself (the way you would pour water into a narrow bottle). Fry on each side until golden brown
      Step 6 
      lift out the akara balls with a slotted spoon and drain on kitchen paper. Repeat the process until everything is fried
      Step 7
      Serve with bread, garri, ogi(pap), custard or fried yam. Enjoy!

      DELICIOUS 5 PEPPER CHICKEN

      I love love this 5 pepper chicken recipe. It's so yummy!

      Ingrdients
      • 5 attached chicken legs
      • 1 teaspoon onion powder
      • ½ teaspoon each – Black, white, Cameroon, chili and pepper flakes
      • 2 maggi cubes
      • Salt – to taste

      Preparation Method
      Step 1
      Preheat oven to 450F.

      Step 2
      Cut Chicken into desired sizes.

      Step 3
      Combine chicken with listed spices.

      Step 4
      Line an oven tray which parchment or baking rack. Oil lightly.

      Step 5
      Arrange chicken pieces on tray and bake for 35 minutes or until crispy and cooked through.

      Step 6
      Enjoy chicken alone, with smoothie or super cold Ijebu Garri.

      BREKFAST YAM CUPS

      This yam recipe is a bomb. I am forever hooked!
      Ingredients
      • Fresh African yam – 550g (About 6 regular round pieces)
      • Fresh Eggs- 5
      • Chopped vegetable of choice – 2 cups (I used Onion and peppers)
      • Salt – to taste
      • Maggi – 1 cube
      • Cornedbeef- 1 cup
      • ¼ cup – melted butter
      • ¼ cup – milk
      • Other seasonings of choice

      Utensils
      Baking dish or muffin pan

      Preparation Method
      Step 1
      Place the cut and washed yams in a pot of salted water. Cook until tender (time required will vary based on new Vs old yam). Drain off excess water.

      Step 2
      Season the chopped vegetables with salt, pepper and any other spices you prefer. Set in the fridge.

      Step 3
      Whisk the eggs, maggi cube, salt, seasoning and spices. Add in the corned beef. Set in the fridge.

      Step 4
      Set your oven to 350 F,

      Step 5
      Mash up the cooked yam. Seasoning with salt and pepper. Add in butter, milk, egg mix and vegetables mix. combine.

      Step 6
      Generously grease your baking dish or muffin pan.  Pour the yam batter into the bakeware.

      Step 7
      Bake for 25-30 minutes (yam is done when toothpick insert comes out clean). Remove from oven and set aside to cool.

      Step 8
      Serve with fresh juice or enjoy as breakfast on the go.
